"Egg"'cellent Hash?
Introduction:
Okay, so I only have one picture of this one and that is solely because I made it and realized afterwards I should have taken pictures throughout, so my bad! There are a lot of variations on what a hash could be, but mostly it's potatoes mixed together with a bunch of other things, mostly some sort of chopped meet. For me, hash was always that weird looking, dog food-esque thing that came in a can. I ate (and continue to eat) it a lot because it reminds me of home. It was mixed up with usually corned beef hash.
Honestly though, I don't know if this is a has recipe or just a home fry recipe with eggs added in. Either way, it was pretty delicious and pretty easy to make. I don't usually add eggs to my potatoes, but I needed some sort of additional thing and this really made it go a long way.
Food Items:
- Potatoes, I used Russets this time.
- I think I used about 1/2 of a 5lb bag
- Oil (I used olive oil)
- Any sorts of spices you'd like. My go tos are usually:
- Cayenne Pepper
- Chili Powder
- Garlic Powder
- Salt
- Pepper
- Onions
- Green Peppers
- Garlic
- Eggs (I used 2 as I went along)
Kitchen Utensils:
- Pot
- Pan
- Knife
- Stirring utensils
- Peeler
- Knife
- Cutting Board
Directions:
- Peel and dice potatoes.
- Boil potatoes til they are almost done, but not quite done.
- This makes it easier to chop and makes them fry up easier and faster
- Drain those potatoes!
- Slide and dice your veggies and garlic
- Oil that pan thoroughly
- Throw in veggies and garlic.
- Let those suckers cook down.
- Add in diced potatoes and cook until golden brown.
- Season season away!
- IF you decide to utilize them eggs, crack them and add them in. And stir away.

Variations:
The egg is key here. Cook it how you like it. I preferred to just throw mine in with everything else. To be perfectly honest though, I made the potatoes first and didn't add in the eggs until I was having leftovers. When I was reheating the potatoes in the pan, that was when I cracked in some eggs. I preferred mine to be scrambled and added in that way, but if you like yours a different way then grab another pan and cook them that way. I bet a nice sunny side up potato would be good here.
As always you can utilize different seasonings and I think a different kind of potato could slightly change your flavor profile. For an actual hash, add in some meat to that sucker.

Final Thoughts:
I really came up with this recipe AFTER I cooked my potatoes. That's when I decided to throw in the egg with some leftovers I had. I hadn't really ever added an egg to my potatoes before, and it added a whole new element of flavor. This recipe is pretty simple and I'm still learning how to not entirely destroy a pan when cooking potatoes. But if you need some slicing and dicing to be done, this is a good one to go to. 3.5/5 for sure, with the egg raising it up to a 4/5.
