"Egg"'cellent Hash?

Introduction: Okay, so I only have one picture of this one and that is solely because I made it and realized afterwards I should have taken pictures throughout, so my bad!  There are a lot of variations on what a hash could be, but mostly it's potatoes mixed together with a bunch of other things, mostly some sort of chopped meet. For me, hash was always that weird looking, dog food-esque thing that came in a can.  I ate (and continue to eat) it a lot because it reminds me of home.  It was mixed up with usually corned beef hash.   Honestly though, I don't know if this is a has recipe or just a home fry recipe with eggs added in. Either way, it was pretty delicious and pretty easy to make.  I don't usually add eggs to my potatoes, but I needed some sort of additional thing and this really made it go a long way.  Food Items: Potatoes, I used Russets this time.  I think I used about 1/2 of a 5lb bag Oil (I used olive oil) Any sorts ...

"Good and Cheap" Potato Salad

Introduction: This recipe was mostly taken from Good and Cheap, the super cheap and awesome cookbook from Leanne Brown.  I highly encourage you to check out all of her recipes and website, here.   The reason behind this one was because I needed a super easy, quick recipe on hand for work.  We were doing a training on "Eating on an AmeriCorps Budget" and Leanne Brown is the boss in this area. Potato salad can be done a thousand ways, so I stuck with this simple recipe, which didn't have mayo, which I believe makes it vegan friendly? But honestly I'm not sure, so my vegan friends should check and make sure. Food Items: 2 lbs of potatoes.
